Blonde Baltic Loaf (5-pound)
Known in Latvian as Saldskābmaize ("sweet and sour bread"), this loaf is more protein-rich and a bit sweeter than our Baltic Rye. We use less wholegrain rye in the Blonde, opting for more white rye flour. It is otherwise the same recipe of 100% rye flour, rye malt, and rye sourdough with a pinch of yeast. This rye is the closest to a classic "Deli rye" flavor, but unlike those wheaten loaves, this is dense and hearty sourdough bread will stay fresh and tasty for weeks.
Like the Baltic Rye, it goes very well with most everything. We love it with nut butters, ricotta cheese, and jams, especially tart lingonberry and currant jams.

The Story
One hundred percent sourdough rye bread is a staple in and central to Latvian culture, identity, and culinary practice. For over a thousand years Latvians have been baking this bread—using rye flour, rye sourdough starter, a hint of caraway, and little else—in 900°f wood-burning ovens.
